So as week 1 draws to a close and I prep for next week. I wanted to post about my first week.
You'll notice, my breakfast are generally the same through out the week. And our lunches are normally leftovers. I give the big portion to B for his lunch at work. Then I'll top mine with a couple over easy eggs.
Day 1 (1.January.14) -
BREAKFAST: I make a breakfast hash. No real measurements just go by my gut. But generally I use:
1- red onion
1- sweet potato ( here I use half, because the commissary sweet potatoes are fucking huge, remind me to get a picture for you)
Whole 30 approved breakfast sausage or bacon
Eggs
I sautee the sausage ( cut into bite sized pieces) in a little EVOO, just to get a little crust on then. Then I add the onions abs sweet potatoes. I season with my typical seasonings (salt, pepper, garlic powder, onion powder, paprika).
Depending in the day and my mood, I'll do the eggs differently. I do 2 eggs over easy for me, 2 eggs over hard for B. Sometimes I'll crack the eggs over the top and scramble them in

Day 2 (2.January.14) -
Breakfast: breakfast hash
Lunch: left overs
Dinner: this was my first "fail". The meat mixture was so yummy, I had big expectations.. But the sweet potato/coconut oil mixture was so over powering. It pretty much ruined the dish, because that's all you could taste. Id cut that part in half, at least.

Day 3 (3.January.14) -

Dinner: I tweaked this recipe because I didn't have an oven safe skillet. So I cooked it in the stove top. But this was AMAZING!!
